—BREAKFAST—

Egg in a Nest

Ingredients:
- Bread (2 pieces)
- Eggs
- Butter
Directions: Tear or cut a 1 1/2" hole out of the center of each piece of bread.
Butter bread lightly on both sides. Place each slice of bread next to
each other on a heated skillet. Crack eggs, one at a time, into the
hole of the bread. Cook on medium heat about 3 minutes. Flip the
egg/bread and cook on the other side until the eggs have set. Slide
onto a plate and serve.

Campfire eggs

note: campfire breakfast, since the most important thing is a bed of very hot coals.

Eggs can, of course, be cooked in a frying pan over the fire, but this way was more fun.

Start by cutting oranges in half (fresh oranges travel pretty well) and juice
them, saving the juice to drink with your breakfast.

Next, remove all the orange pulp and membrane, so that the orange peel is an empty shell.

Break one egg into each orange half.

Use barbecue tongs to move the orange-eggs from the plate to the hot coals. rounded side down

Two sticks can be used if you don't have a set of tongs, but that's a less stable way to move things.

After a few minutes, the egg will bubble and cook. Keep a close eye on your
campfire cooking, because there is no exact cooking time here.

Serve with salt and pepper. The egg will have a pleasant orange flavor.

Raisin Cinnamon Egg Squares

This tasty breakfast includes fruit, eggs and bread for a diverse meal in just minutes.

You need: 12 slices of cinnamon raisin bread, 4 eggs, 3 tablespoons of milk, butter or cooking oil

To make: Beat the milk and eggs together in a bowl until completely mixed. Heat butter or oil in a griddle or pan. Soak each slice of cinnamon
raisin bread in the egg mixture. Fry the bread on each side until it is
golden brown. Tastes great by itself and served with canned fruit,
butter, powdered sugar or maple syrup over the top.

Breakfast Burrito's -

There are two ways to make these...
First way is to scramble some eggs and mix in chopped/sautéed sausage. Or Bacon.

Heat a soft flower tortilla directly over the stove burner for a few seconds on each side.

Remove and butter one side.

Fill with egg/sausage mixture, add cheese, sour cream & salsa as desired.

The other way is to fry up a couple eggs, and also fry up a couple of sausage patties.

Heat tortilla as described above.

Place two fried eggs on tortilla, then two sausage patties.

Add a couple slices of cheese, sour cream and salsa as desired.

Both are simple to make, easy to handle, and the kids love them!

Wow, these ALL sounds delicious!  Can't wait to try some of them out this summer!  I'm especially looking forward to the breakfast recipes as I am a HUGE big breakfast person on the weekends :)  Thanks for the info

Awesome list of things to make! Here is one my family has kicked around for decades;  I make it at home before camp trips, though I am sure it could be made on the fire or cooker with the appropriate gear.

Sausage Bake

1lb cooked breakfast  sausage
1/4 cup drippings
1 3/4 cup pancake mix
6 eggs
1 cup cottage cheese
1lb cubed/shredded monterey jack cheese (cubed makes melted blobs, while shredded is more evenly distributed)

cook sausage and cool
beat eggs till good n frothy
mix everything up, adjust pancake mix as needed - its a sticky mess usually.
bake at 350F in a well buttered 9x13 until golden brown on the edges. It will rise a little.

I have used 2lb sausage, 2lb pepper jack, 1lb cottage cheese, Pamelas Bake (GF) mix; this yields a very heavy duty meal of awesome morale boosting proportions.  I will sometimes use crispy bacon chunks mixed in and put candied bacon strips on top; this tends to blow peoples minds. We like to douse it in a bit of maple syrup and butter. Season as you see fit, however.
A simple dry pancake mix: 1c flour, 2 tsp baking powder, 1/2 tsp salt
